Basic Crockpot Pot Roast      Serves: 6-8

Ingredients:
      1/4 cup flour 
      5 pound roast
      2 to 3 tablespoons fat or oil
      2 onions, sliced
      1 to 2 carrots, scraped and cubed
      1 teaspoon salt 

      1/4 teaspoon pepper
      Optional Herbs: bay leaf and/or thyme
      1 cup liquid (wine, bouillon, vegetable or beef broth,)
      Other vegetables, as desired such as baby red potatoes

Directions:

  • Season the flour with the salt and pepper and pound the mixture into the meat.
  • Brown meat on all sides in the hot fat or oil.
  • After browning the meat, transfer to a slow cooker. Pour off excess fat from the pan. Sauté onions in the same pan until softened slightly, then add to the slow-cooker. Pour liquid into the slow-cooker, and add carrots and herbs. Cook on low 8 hours or more, adding desired vegetables during the last 20 or 30 minutes.

Crockpot Appley Kielbasa 
Yield: 12 appetizer servings  -  Prep time:  15 minutes - Cook Time: 7 hours
 Ingredients:
  • 2 lbs. fully cooked kielbasa sausage
  • 3/4 cup brown sugar
  • 1 cup chunky applesauce
  • 2 Tbsp. Dijon mustard
  • 2 cloves garlic, minced
Preparation: Cut kielbasa into 1" pieces and combine with brown sugar, applesauce, mustard, and garlic in 3 quart crockpot. Cover and cook on low for 6-8 hours until thoroughly heated.If you have a new hot cooking crockpot, cook on low for 4-6 hours until hot.

Crockpot Sloppy Joes      Serves:  10  -  Prep time: 20 min  -  Cook time:  5 hours
Ingredients:
  • 2 lbs. lean ground beef
  • 1 onion, chopped
  • 1/4 cup water
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 12-oz. bottle chili sauce or ketchup
Preparation: Cook ground beef in heavy skillet until brown and crumbly. Drain thoroughly and place in slow cooker. Add remaining ingredients and mix well. Cover crockpot and cook on low for 4-6 hours until onions are tender. Serve in sandwich buns or on tortilla chips.

Crockpot Sweet and Spicy Meatballs
Serves: 8-10  -  Prep time: 10 minutes  -  Cook Time:  2 hours, 15 minutes
Ingredients:
  • 2 pounds precooked frozen meatballs
  • 1 cup grape or apple jelly *
  • 2 cups chili sauce or cocktail sauce 
Preparation: Heat meatballs in oven as directed on package. Place in 3-4 quart crockpot. Mix jelly and chili sauce or cocktail sauce thoroughly, pour over meatballs, stir well, cover crockpot, and heat on high 1-2 hours until sauce is hot. Turn heat to low until ready to serve, stirring occasionally.
(*Any jelly or jam and any spicy tomato-based sauce will work well).

Healthy Crockpot Yellow Split Pea Soup with Ham
  Prep Time:  25 min     Total cook time 5-8 hours    Serves: approx. 8, 1 ½ cups

Ingredients:
            3  cups (or approximately 11/2 pounds) yellow split peas
            4  cups water
            4  cups reduced-sodium chicken broth
            2  cups chopped yellow onion
            1  cup chopped carrot
            1  cup finely chopped celery
            8  ounce(s) ham, trimmed and diced
            1  teaspoon dried marjoram
            Freshly ground pepper, to taste
Directions:

            Place split peas in a medium bowl. Wash with cold water until the water runs clear; drain and spread in a 5- to 6-quart slow cooker.
  • Add water, broth, onion, carrot, celery, ham, and marjoram, to the slow cooker. Stir to combine.
  • Cover and cook for 5 hours on high or 7 to 8 hours on low. Season with pepper.
